If you own your favorite knife, you often ask yourself after some time: how to sharpen it after dulling? More efficient and beginner-friendly than flat whetstones, or stones, are tools with fixed sharpening angles. Unlike ceramic stones, such a set allows you to effortlessly maintain the best angle for sharpening a given knife. There are different types of this type of whetstone. They can be rods of different gradations, since depending on the dullness of the blade, a specific gradation is needed to strip the top layer of steel from the cutting edge. When sharpening with such tools, we move the blade in a specific direction, usually from top to bottom or by dragging it from the hilt to the tip. More professional are sharpeners, in which the knife is placed in a vise, and stones of different gradations are placed on the guides. Such a method, with the right amount of practice, will allow you to sharpen your knife not only to working value, but to surpass even factory sharpness. Your tool can therefore be sharpened better than it was out of the box. The last type is electric sharpeners, on which special tapes are placed - this way is the fastest and most efficient, but also costs a bit more than its mechanical counterparts.
As for the gradations themselves, the rule of thumb is that the more dull your knife is, the lower the value you should use to pre-sharpen it. If your tool is completely dull, the appropriate value will be 120 to 600. From 600 to 1,500, you can sharpen your knife to a working value, that is, one that will allow you to work without problems, although it will still be a little short of perfect. If you intend to sharpen your knife to the best, it will be necessary to get diamond rods or stones of high gradation - up to 6000, which will properly polish the cutting edge, giving the blade the best cutting properties.
