A knife designed for filleting and separating meat from bones. The Straight Back blade is made of 4116 Cryo Quenched stainless steel. The ergonomically contoured black handle is made of Zy-Ex hard plastic and covered with food-safe Kray-Ex material featuring a non-slip texture.

4116 Cryo Quenched stainless steel

The blade is made of 4116 Cryo-Quenched stainless steel, which has undergone cryogenic treatment, resulting in higher hardness and better toughness. The steel is corrosion-resistant and easy to sharpen.

The Straight Back blade has a length of 152 mm and a thickness of 1.75 mm. The blade has a satin finish, which leaves an even, linear pattern and reduces glare on the blade's surface.

4116 Cryo Quenched
4116 Cryo Quenched is an improved version of 4116 stainless steel (DIN 1.4116), produced by ThyssenKrupp, subjected to additional cryogenic treatment, which improves its durability and mechanical properties. The carbon content (0.45-0.55%) ensures good hardness, while chromium (14-15%) provides corrosion resistance. The steel also contains molybdenum, vanadium, manganese, silicon, and nickel, which support its strength. The cryogenic process stabilizes the steel, increases wear resistance, and maintains sharpness for longer. After heat treatment, it reaches a hardness of 55-57 HRC, making it easy to maintain and resistant to corrosion. It is widely used in the production of kitchen knives and premium utility tools.

Satin
Satin finishing is one of the most popular blade finishes, achieved by grinding the steel with fine-grained abrasives. Parallel micro-scratches remain on the surface, giving the knife a technical, matte appearance. Satin finishing has both aesthetic and practical significance - a smoothed blade is easier to clean, and the slightly reduced friction promotes smoother cutting. Depending on the direction and intensity of polishing, different effects are achieved - from a matte finish to an almost mirror-like finish. Zy-Ex is a composite material developed by Cold Steel, based on glass fiber reinforced polyamide. The material is lightweight yet very rigid, allowing for the construction of a solid handle without excessively increasing the weight of the knife. The surface of Zy-Ex is designed to imitate the structure of natural wood, which gives it an attractive appearance and improves grip. Thanks to the combination of these features, Zy-Ex is used in tactical, outdoor, and EDC knives.
