Kitchen knife inspired by Japanese chef's knives - santoku. The Core series was developed in collaboration with experienced German retailers of specialist knives and kitchen accessories from the cities of Trier, Wiesbaden, Münster, and Luneburg. The ergonomically shaped, non-slip handle is made from walnut wood.

The blade with a length of 16.5 cm is made from high-quality stainless steel X50CrMoV15. The blade was hand-forged in Solingen and hardened to a hardness of 58 HRC, which ensures high resistance to dulling and a long blade life. Additionally, manual grinding and polishing guarantee exceptional sharpness and smooth cutting.

walnut wood handle

The ergonomic handle made from natural walnut wood provides a secure grip. Safety and comfort of use are enhanced by the forged bolster protecting the hand from slipping onto the blade. A distinctive feature of the Core series is also the rounded back of the blade, thanks to which the knife rests securely and comfortably in the hand even during intensive use or strong pressure while cutting.

The carbon content (0.45-0.55%) ensures good hardness and edge durability, while chromium (14-15%) guarantees high resistance to corrosion and oxidation. The steel also contains molybdenum (up to 0.6%), vanadium (up to 0.2%), manganese (up to 1%), silicon (up to 1%), and a small amount of nickel (up to 1%). It achieves a hardness of 55-57 HRC after appropriate heat treatment, which allows for knives with good cutting properties, easy maintenance, and corrosion resistance.
